Calcium dihydrogen phosphate can be used as leavening agent, dough regulator, buffer, nutrient supplement, emulsifier, stabilizer and other quality improver. It can improve food complexing metal ions, pH value, increase ionic strength and so on, and can improve food adhesion and water retention.
